80g penne pasta

1/2 red pepper

1/2 yellow pepper

1 small red onion

100g cherry tomatoes

80g courgettes

10g grated Parmesan


1. Cook the penne pasta.

2. Cut the red and yellow pepper, a small red onion, 100g cherry tomatoes and 80g courgettes and brush with oil on a baking tray

3. Drain the pasta and mix with grated Parmesan.

4. Serve with the vegetables and drizzle with Balsamic vinegar.
